You learn shortcuts quickly when trying to be thrifty with time. Whether it be preparing everything the night before (clothes, coffee pot, bag for work), or minimizing the amount of dishes done in an evening.
Hand washing dishes in my tiny sink is a perpetual chore during the preparing, cooking and cleaning up of any meal. In an effort to cut down on the amount of dishes I have, and the time I spend doing dishes, I wrap my baking sheets in aluminum foil and have purchased crock pot liners to help with clean-up. Trying to wash baking sheets or the crockpot in the sink ends with me being soaked in soapy water.
As you can tell, I am not a fan of doing dishes. I end up sopping wet almost every time. Spoons and bowls are the worst. Water just shoots off the curve like a bullet and before you know it, you're trying to figure out how it all went awry so quickly.
Tonight, I shall have chicken tacos for dinner. When I went home for lunch, I placed the chicken, salsa and taco seasoning (all that's needed for the recipe I chose) into my crockpot and set it on high so that it would be done when I get home from work. It's a large recipe, so I will have plenty left over for lunch tomorrow, and maybe even dinner.
I chose to do a crockpot meal for tonight because I have a meeting to cover this evening and I am trying to work on the whole time management debacle. I don't want to be tempted to go through the drive through, and this way dinner is ready and waiting when I walk through the door.
Again, working on that whole time management thing. Less time doing dishes, less time preparing food, etc.
I also put a pitcher of coffee in the fridge to brew so that I would be able to bring iced coffee with me to work. I know, I know. It's freezing outside. However, I like to remain highly caffeinated and it is so much easier to drink iced coffee. No tongue scalding. I will drink my iced coffee while the hot coffee cools down a bit. Like I said, highly caffeinated.
A couple simple recipes I will be whipping up this evening before going to my meeting are iced coffee cubes and homemade ranch dressing for those days I just don't feel like cooking and a nice salad sounds lovely.
I love iced coffee and have found a recipe to make it at home instead of paying five dollars for it every time. In an effort to save money I am going to prepare it myself. I have made this recipe before when I still lived with my parents. I like the idea of using iced coffee cubes instead of regular ice so that my coffee doesn't get watered down.
The blog where I found the recipe for the ranch dressing said, "The best part: this ENTIRE jar of dressing, is only 255 calories, 1.75 grams of fat, 42 carbs and 34 protein."
The chicken strips and sweet potato fries went over swimmingly with the two friends I had over for dinner. I had some left over and enjoyed it as my lunch today.
A few snafus were hit, but nothing major. I am a smidgen accident prone. When I was peeling the potatoes I was lucky not to slice part of my finger off. Sweet potatoes are very hard to cut, so prep time took longer than I would have liked. I should have started with the potatoes and placed them in the oven since the cook time was longer, and then battered and breaded the chicken strips so the meal would have been done at the same time. I also need to invest in a pair of tongs. I wasn't able to flip the fries over, and while they turned out fine, tongs will probably come in handy in the future. You live and you learn, right?

I am a 23-year-old college graduate going through the ups and downs of learning to live on my own and be financially responsible for myself. I suspect it is going to be an interesting ride.
